The cellar & the candle

Wine, simply
A house white — a Sancerre or a Chablis. A house red — a Beaujolais cru or a Barbera. One bottle of something better than you needed. Champagne is always correct on arrival, never poured in haste.
Candles, always
Unscented at the table. Beeswax taper, never tealights. Lit twenty minutes before guests arrive, so the room remembers it is being hosted.
